Black Bean Salsa

Black Bean Salsa
Serves 6, 3/4 cup

Ingredients:

  • 1 15.5 ounce can black beans, drained
  • 1 cup frozen corn kernels, thawed
  • ½ red bell pepper, washed, seeded and diced
  • 1 medium tomato, washed and diced
  • ½ cup red onion, peeled and diced
  • 1 garlic clove, minced
  • 2 teaspoons fresh cilantro, washed and finely chopped
  • 2 Tablespoons cider vinegar
  • 3 Tablespoons olive oil or vegetable oil
  • Juice of one lime

Directions:

  • Wash hands with warm soapy water and dry well.
  • In a large bowl, combine all the ingredients. Stir well and chill for 1 hour before serving. Enjoy.

Options:

  • Try adding a jalapeno or hot chili for more spice
  • Add shredded or finely chopped summer squash and carrots
  • Cooked fresh corn on the cob, removed from cob can be added
  • Canned corn can also be used
  • No salt diced tomatoes can be used in place of fresh tomato
  • Serve with baked tortilla chips, top on a salad or baked potato!
